Baked Salmon Easy Meal

It's been a while since I had something solid or substantial for dinner - not that I don't like having tofu on noodles - just thought it's time to do a little proper cooking. I'm still not bothered enough to make anything too time consuming or even energy consuming, this salmon I bought on the other day shall find its way to my stomach alright.

The thing with salmon is that it takes such a short time to cook, and I don't even need to be fussed about taste.

1 onion, thinly sliced
Salmon fillet, about 120g for each person
A dribble of sunflower oil
Salt & pepper
Coriander leaves for garnish, cut into small chunks

Line a baking dish with foil, place the onion slices on the foil as a trivet. Lightly brush the salmon on both sides and place it over the onion, skin side down.

Spinkle with salt and pepper, bake in a preheat oven at 180ºC for 10-12 minutes. Once it's easily flaked by the touch of a fork, it's done.

I simply garnished it with the onion slices and top with some chopped coriander leaves, and serve with some quick fix fruit salsa and toasted homemade buns. Gentle on my still somewhat sickly stomach, and was enough to pick up my appetite.
