Sandwich with Sweet Grated Coconut Filling

I woke up thinking about sweet coconut buns, just because I made toasted grated coconut yesterday.

Oh just as well I did, how lucky.

As this is breakfast, I'm hungry and only 80% awake, nothing too complicated 😄

Spread some butter on both slices of bread, sprinkle the toasted coconut generously on one,
then top with some palm sugar.
Dap the 4 sides of the other slice of bread with some water,
stack it over and gently press all around to seal the sandwich. Place it on a grill over an oven tray.

Toast in the oven at 160ºC for about 8-10 minutes.
