Cooking time: 20-25 minutes
For every aubergine (medium size), mix the following:
3 teaspoons cooking oil
2 cloves of garlic, minced
A little squire of HP brown sauce
A little salt & pepper
Slice each aubergine lengthways to 4, rub the bottom side with some oil and spread the above mixture on the top. Arrange them on to an oven tray lined with foil.
Roast in the oven set to 200ºC for 20-25 minutes.
Done - one of the world's easiest-to-make and tastiest appetisers, goes with almost anything. Dribble with some sour cream or yoghurt, or just eat it on its own.
