Home Made Nutty Chocolate Bites
Ever since I tried making chocolate sauce from cocoa powder, I got a little hang of it and want to get my fingers on other chocolaty things. Since I've got some hazel nuts and almond readily in the kitchen, it's a very good excuse to do something with them before they go stale.
I made another lot of chocolate sauce with thicker consistency with the following combination of ingredients:
220g cocoa powder (I've used Delfi 100% Cocoa Unsweetened)
170g butter, softened at room temperature
I made it with the same process as the chocolate ganache, then chill it in the fridge.
I then mixed about 30 gram each of the chopped almond and the hazel nuts (which I roughly chopped into small chunks) in a small shallow oven dish, sprinkled a little ground mulling spices over it, and toasted it in the oven at 160ºC for about 15 minutes.

When the chocolate is chilled (about 10-15 minutes) to a thick but not hard consistency, mix the nuts in and stir well so that all the nutty bits are coated with chocolate.
Scoop out with a teaspoon, and drop into mini cake cups placed in mini cup cake dish, by pushing each dollop with another teaspoon.
Chill in the fridge. It will take about 15 minutes or so to harden. As the chocolate is quite a soft texture, I would just keep them in the fridge.
There you go, my own nutty [real] chocolate bites - not too sweet or expensive - though not packed in gold wrappers 😀
